Walkers and jumpers oh my

It's been a crazy week here with two tots teething! Hadley is getting her second molar (it broke through yesterday) and Corbin is working on his first teeth.... wow are they a bit testy. Honestly, when one is happy or sleeping the other is fussy :( so it's been a tough week for me.
Hadley is walking behind her three different walk behind toys. Corbin discovered the Jumeroo today and thinks it amazeballs so at least they are both active in their teething times! ;)
This weekend we have a wedding so at least the week will end with some fun.

Weekend recap

Friday- Jim took the day off and we went to the zoo with most of his immediate family which was great. Hadley seemed to like the bear exhibit the best.
Saturday- We went car shopping as we are actively interested in trading in my much loved coupe for a more family friendly vehicle. No new car yet but we are ready when we find the right one!
Sunday- Water heater leaking when we woke up... no fun--- time to replace. I went to the Mall of America with Jim's mom and got a new dress and a tie [for Jim] for a cousin's wedding we have this upcoming weekend in Iowa. We also spent way too much time ;) in DSW since both of us came out with new shoes. I got a cute pair of sperry's with leopard accent since I am sure that I won't find any for fall once back to school shopping begins!
Now it's back to reality this week until we get to leave for Iowa on Friday :) should be fun!

Cousins

Two of Hadley's three cousins are in town so we've been trying to spend as much fun time as possible with them. We've been to the Children's museum and the Mall of America so far ad today we are all headed out to the Minnesota Zoo!
Hadley has been pushing her ikea cart and her VTech walker up and down the hallway this week. She is super close to taking some independent steps... I can feel it. ;)

Twins game

We took Hadley to her first Twins game of the season yesterday and it was HOT. We only sat in our seats for an inning and a half so we ended up walking around to check out different spots. I used our Ergo baby carrier that Jim's sister bought us in the backpack mode and I still just love that silly thing... so simple but insanely versatile and long lived compared to a bjorn or the like.
It was pretty fun to go out to Target Field but next time we go Hadley can stay home with grandma since she can't sit still quite yet. ;)

Two under two

It's been a very busy first full week of babysitting a babykins along with my sweet Hadley. They are almost exactly 13 months apart {3.19.11 | 4.17.12} so my hands are literally very full most of the daytime hours.
Hadley has been pulling up on absolutely everything. She is also pulling to stand and then letting go and standing independently for a few seconds before plopping onto her bottom! She posed for some cute pictures on our DSLR camera to send to my sister Mackenzie who is at camp in Utah. I'll need to upload some of them... she could do pageants :) haha.

First Molar!

On Saturday, Hadley's first molar officially emerged. She had been working on it {teething wise} for a week so it actually came much quicker than her first eight teeth. Hopefully the other molars will come as easily!

{Skinny} Blackberry Raspberry Cobbler

So this was my red/white/blue dessert that was so good I forgot to take a picture before it was nearly gone. (:
The recipe is adapted from Pioneer Woman's Blackberry Cobbler #1 but this version has over a hundred calories less per serving and the taste doesn't leave you feeling like you've missed a thing which is AMAZING!
Ingredients:
4 tablespoons Greek Yogurt non-fat
4 tablespoons butter
1 cup self-rising flour
1 cup skim milk
1 cup white sugar
2 cups blackberries
2/3 cup raspberries
Directions:
Preheat oven to 350F and spray non-stick spray on a rectangle casserole dish.
In a mixing bowl, whisk together flour and all but 2 tablespoons of the sugar.
Whisk in the milk and yogurt.
Melt the butter in the microwave for 30 seconds and then whisk into the batter.
Pour batter in sprayed casserole dish.
Evenly distribute berries.
Sprinkle remaining sugar over the dish.
Bake for one hour or until golden and bubbling.
Personalizations:
You can use this same basic recipe for any fruit that you would like to have in a cobbler. I think I will try peach next! Also, the above serves 8 at 196 calories a serving but you could half the recipe if you don't want a ton extra sitting around if you aren't making it for a party.

Fourth of July

We had a fun, super HOT fourth of July! We went to the same parade as last year and this time Hadley enjoyed it a little more since she actually saw it. It was a record heat day topping out at 101F!! Almost 10 degrees hotter than Orlando.... yes, truth.
It's fun to compare last year to this year- so much growth and change in 12 months!

Easy Chicken Masala

I found the Trader Joe's Masala Simmer sauce while scouring the shelves for my favorite garlic aioli mustard (that I slather on almost everything). The thought was "hey, it could be easy Indian at home" so I picked it up and forgot about it in the pantry for a while until I was brave enough to try it out.
I used one package of Bare chicken breast strips cubed, half a sweet yellow onion sliced thin, one package of mini sweet peppers (roasted on the stove before use), olive oil, minced garlic, canned peas, the Trader Joe's Masala Simmer sauce and white rice.
It turned out so great so I thought I'd share since the sauce could honestly be great in a multitude of different dishes.
