Foodie Friday Returns: Cranberry Almond Chicken Pasta Salad
So hallelujah I can finally cook again (most days the morning sickness is gone!) which means I can return to sharing favorite new recipes on Friday. Today I want to share my new favorite pasta salad. I know, it's the middle of winter(!) but I really needed a pick-me-up so I went with it.
Cranberry Almond Chicken Pasta Salad
Ingredients:
2 cups Greek yogurt
1/4 cup confectioners sugar
2 tablespoons olive oil based mayo
2 tablespoons poppy seeds
2 tablespoons water
2 chicken breasts, boiled & cubed
1/2 sweet vidalia onion chopped finely
1 cup craisans (dried cranberries)
2/3 cup sliced almonds (from baking aisle)
2 teaspoons black pepper
1 pound box of rotini pasta, prepared & cooled
OPTIONAL-
4 stalks celery, chopped
2 teaspoons salt
Directions:
1) Prep dressing by mixing together the first 5 ingredients.
2) Once cooled, add dressing to prepped pasta and chicken.
3) Add onion, craisans, almonds and black pepper. Stir until everything is coated. Chill until serving in the fridge.
ENJOY!
I'm off to a Kindermusik class with Hadley this morning then we're having lunch out with Jim so we've got to run. Have a great weekend everyone! :)

16 Weeks
Total weight gain/loss: Not sure at the moment but we have our second appointment next week so I will know more after that.
Maternity clothes? Yes, pants at least! So much more comfy.
Stretch marks? No new ones yet.
Symptoms: I continue to feel good with occasional times of being nauseous and really dizzy.
Sleep: We are out of town, so no maternity body pillow :( and everything just feels not normal so it makes for tougher sleeping. That's okay though.
Best moment this week: Hadley continues to feed herself more and more with a spoon and fork. She is also getting better at saying words that she has been babbling for a while now. It's so cool to watch her grow!! My grandparents took us to an awesome restaurant in Downtown Disney called T-Rex and she LOVED IT! Seriously, for her, the scarier the better sometimes! When it would get dark in the restaurant and the dinos would all growl she would laugh and clap and sing.... she thought it was so great.
Have you told family and friends: Yes
Miss Anything? This week, I miss Jim and our poodles, Lucy and Cooper! Can't wait for Jim to get here for the celebration on Friday!! Not missing anything in relation to the pregnancy though, all is good.
Movement: I thought that I felt something a few times this last week but I'm not sure...
Food cravings: ICE CREAM everything: milkshake, waffle cone, etc.
Anything making you queasy or sick: Raw meat, potato chips
Have you started to show yet: Yes, this last week I've definitely popped a little.
Baby is a: Still a SURPRISE :) We will find out in February!

15 Weeks
How far along? 15 weeks
Total weight gain/loss: Still haven't officially gained anything yet but we will see what the scale says at our 17 week appointment in a few weeks.
Maternity clothes? All of my regular pants still fit everywhere but the belly so it's time for maternity bottoms.
Stretch marks? No new ones yet but Hadley gave me quite a few so I'm by no means genetically lucky that way.
Symptoms: I am feeling great except for the occasional lapse back to nausea and dizziness. This morning I had a tough time making Hadley a peanut butter sandwich.... but after 15 minutes I was back to normal.
Sleep: I got a maternity pillow last week and it's been much easier to sleep although I still wake up momentarily a few times a night.
Best moment this week: Hadley successfully fed herself a cup of applesauce with a spoon without any prompting. It was a very proud mommy moment to stand back and see her being a big girl all on her own.
Have you told family and friends: Yes
Miss Anything? I'm starting to miss feeling slim but that's all part of the experience.
Movement: Not yet
Food cravings: Fried fish with hush puppies; Chik-fil-A sandwich
Anything making you queasy or sick: Raw meat, potato chips, goldfish crackers
Have you started to show yet: I look bloated since everything is being pushed UP! I can feel that things are changing in how my pants fit and how my underwire feels on my ribs.
Baby is a: Still a SURPRISE :) We will find out in February!
Belly Button in or out? IN.
Wedding rings on or off? On :)
Happy or Moody most of the time: Happy
Looking forward to: Our trip to Orlando to prepare for and then celebrate my grandparents' 50th wedding anniversary! Hadley and I will be going down early so we will definitely miss Jim and our dogs but I WILL NOT miss the frigid January weather these next two weeks. I can't wait to run around with Hadley outside and play with her in the pool and at the park~ the sunshine will be wonderful.

Oh Baby TWO!
We are so extremely excited to share that we are expecting our second child around July 8th!! I'm currently 14 weeks and out of the first trimester so I thought this would be the perfect week to come out of online hiding and start weekly updates.
How far along? 14 weeks
Total weight gain/loss: I don't think that I've gained more than maybe a pound so far. I'm really trying to keep to as clean and healthy a diet as possible this time around since I gained a lot when pregnant with Hadley and it wasn't fun to lose it once she was here.
Maternity clothes? All of my regular pants still fit but BARELY! I have bought one pair of maternity skinny jeans since all of my pants and jeans from when I was pregnant with Hadley are too big since I was heavier. I will likely need to start wearing them full time really soon since the buttons on my regular jeans/pants are just hitting in a really uncomfortable spot right now.
Stretch marks? No new ones but Hadley gave me quite a few so I'm by no means genetically lucky that way.
Symptoms: I am feeling pretty good. Nausea is slowly improving but car sickness is still in full force. It's totally worth it to live with any symptoms though so no complaints here.
Sleep: I have been waking up at 3:30 a.m. nearly every morning and struggling to fall back asleep. I hope to get a maternity Snoogle pillow soon.
Best moment this week: Announcing our pregnancy to friends and family both in person and then on Facebook. It's so nice to not have to keep a secret anymore!!
Have you told family and friends: Yes!
Miss Anything? Not yet :)
Movement: Not yet
Food cravings: Indian, Chik-fil-A, pizza
Anything making you queasy or sick: Raw meat is not my friend right now and potato chips are seriously gag worthy.
Have you started to show yet: My stomach continues to fluctuate in size. I still have days where I don't think that I look pregnant at all and other days I say to myself, wow, this belly really IS growing.
Baby is a: ??? We will find out in February!
Belly Button in or out? Still in.
Wedding rings on or off? On
Happy or Moody most of the time: Happy!
Looking forward to: Our anatomy scan when I'm 20 weeks. We continue to pray for a healthy baby.

I'm working on getting a weekly picture with Hadley but she doesn't always want to cooperate so we will have some tearful shots and that's completely okay. We will laugh about it when she's older. ;)
